Steam them! Using a steamer basket over 1” of boiling water, steam your egg for 6 minutes for soft, 9 minutes for medium, and 12 minutes for hard cooked.
Once steamed; working with one egg at a time, place an egg in a small bowl of ice water for 5 seconds. Remove from water and gently but thoroughly crack the shell on the counter. Remove shell. If the shell begins to stick, place back into ice water for a few seconds then continue peeling.
Keep eggs that you are not currently peeling in the steamer basket over a heat proof bowl (not over the water).
