Sandra Lee’s Pulled Pork

We recently discovered Sandra Lee’s new show on the Food Network “Sandra’s Money Saving Meals”. We like the format of the new show much better than her previous one, she seems so much more likable now.

One of the first episodes we watched featured a recipe for Slow Cooked Orange Pork Roast Tacos that looked really good, the only problem was that I don’t have a slow cooker and 10 lbs of any meat is way more than we need. I made a few tiny changes to her recipe with great results and thought I’d share them here because this is a recipe we should all share with our friends.

I started with about 2.5 lbs of pork shoulder cut into “boneless ribs” since it was the only shoulder available at Costco. I preheated my oven to 325 and put the meat into a large pyrex baking pan fat side up. I mixed the sauce measuring by eye (the recipe is simple: one medium onion chopped, 2 T soy sauce, 1 T chopped garlic, 2 tsp salt, 1 tsp fresh ground black pepper and 1 C orange marmalade) and poured that on top of my meat. I covered the pan with foil and put it in the oven for 2.5 hours. When the pork came out of the oven it was fork tender and pulled apart easily, the fat had melted away and all that was left was a heavenly mixture with a hint of smoky sweetness that was fabulous with the rest of our taco dinner.
