Jamie’s “Proper Chicken Caesar Salad”

Healthy Grilled Chicken Caesar Salad

Anyone who has watched Jamie Oliver cook knows that the guy is amazing in the kitchen and his food must taste out of this world. In the middle of 2009 I was lucky enough to catch an episode of his show where he made some of the most amazing looking chicken I’ve ever seen. Chicken Ceaser Salad

400 degrees
60 minutes

Ingredients

1 package skin on chicken thighs
1 loaf of ciabatta or other sour dough bread, tear into bite sized pieces
3 sprigs fresh rosemary, remove leaves from stalk and chop roughly
Olive oil
salt and pepper
12 slices pancetta or bacon
1 package pre-chopped romaine lettuce (or 2 heads)
1 jar high quality caesar salad dressing – usually found cold in the produce section.
Grated Parmesan cheese

Directions

Preheat the oven. Place chicken, bread, rosemary, salt and pepper into a large food storage bag, and mix until the chicken and bread are coated with olive oil. Empty contents of bag into a roasting dish, arrange the chicken so that it’s sitting on top of the bread. Cook in oven for 45 minutes.

After 45 minutes layer the bacon or pancetta on top of the chicken and cook for another 15 to 20 minutes until bacon is cooked. Remove from oven and let sit until chicken is cool enough to handle.

Pull the chicken off the bones, cut the chicken and bacon into bite sized pieces. Toss in a bowl together with dressing, lettuce, and croutons. Serve with Parmesan cheese and a nice white wine.
